Thai Vegetable and Noodle Stir-Fry

On those busy nights where you need dinner, but have nothing ready, you can whip up this Vegetable and Noodle Stirfry with what you have.

One Wok Thai Vegetable and Noodle Stirfry

Ingredients

  • 1 can organic jackfruit (optional)
  • 4 cloves garlic, minced
  • 3 tbsp. coconut oil
  • 3 tbsp. green curry paste
  • 2 tbsp. almond butter
  • 2 tbsp. lime juice
  • 1 tsp sea salt
  • 1 tsp red pepper flakes
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1 cup bean sprouts
  • 3/4 cup green onions, sliced
  • 1 pkg gluten free rice noodles, cooked
  • 1/2 cup cilantro

Instructions

  1. Saute jackfruit, green onions and garlic in coconut oil.
  2. Add spices, lime juice, curry paste and almond butter
  3. Add vegetables and continue to saute until done
  4. Add cooked noodles
  5. Garnish with cilantro
