Fried Jackfruit Rice With Maple Ginger Glaze is ready in less than 30 minutes!
Ingredients
Fried Rice
- 1 cup organic jackfruit
- 5 cloves of garlic minced
- 2 tablespoon(s) coconut oil
- 1 teaspoon red pepper flakes
- 1 teaspoon sea salt
- ½ cup sliced leeks
- ½ cup red pepper sliced
- 2 cups brown rice cooked. I use Seeds of Change Quinoa Brown Rice
- ¼ cup vegetable broth
- ¼ cup bean sprouts
- Any additional veggies that you have on hand for added flavor and nutrition-cabbage carrots,broccoli.
Maple Ginger Glaze
- ¼ cup maple syrup
- 2 ginger slices
- ½ teaspoon sea salt
- 1 tablespoon(s) coconut aminos
Instructions
Fried Rice
- Saute jackfruit, garlic, leeks, bean sprouts and red pepper in coconut oil. Add sea salt and red pepper flakes.
- Add rice and vegetable broth and simmer for 8 minutes or until heated.
Maple Ginger Glaze
- Mix all ingredients in blender.
- Serve rice topped with glaze.
- Sprinkle with sesame seeds and garnish with sliced leeks.
