Fried Jackfruit Rice With Maple Ginger Glaze.  This is a delicious version of fried rice, with jackfruit added to give it that feeling of having substance of meat or fish.  Start with garlic, peppers, leeks, bean sprouts, add any additional veggies that you may have.  Add spices, rice and top with delicious, simple maple ginger glaze.  You now have a delicious bowl in less than 20 minutes.  Vegan, gluten free, dairy free.

Fried Jackfruit Rice With Maple Ginger Glaze

Ingredients

    Fried Rice
  • 1 cup organic jackfruit
  • 5 cloves of garlic, minced
  • 2 tbsp. coconut oil
  • 1 tsp red pepper flakes
  • 1 tsp sea salt
  • 1/2 cup sliced leeks
  • 1/2 cup red pepper, sliced
  • 2 cups brown rice, cooked. I use Seeds of Change Quinoa Brown Rice
  • 1/4 cup vegetable broth
  • 1/4 cup bean sprouts
  • Any additional veggies that you have on hand for added flavor and nutrition-cabbage,carrots,broccoli.
  • Maple Ginger Glaze
  • 1/4 cup maple syrup
  • 2 ginger slices
  • 1/2 tsp sea salt
  • 1 tbsp. coconut aminos

Instructions

    Fried Rice
  1. Saute jackfruit, garlic, leeks, bean sprouts and red pepper in coconut oil. Add sea salt and red pepper flakes.
  2. Add rice and vegetable broth and simmer for 8 minutes or until heated.
  3. Maple Ginger Glaze
  4. Mix all ingredients in blender.
  5. Serve rice topped with glaze.
  6. Sprinkle with sesame seeds and garnish with sliced leeks.
