Roasted Vegetable Lettuce Wraps
Fresh vegetables grilled and wrapped in crisp lettuce and topped with lemon garlic creme.
Ingredients
Vegetables
- 4 cups of frozen harvest vegetables-- I used Organic Rustic Roots-sweet potatoes, carrots, onions, parsnips
- ¼ cup olive oil
- 1 tablespoon sea salt
- 1 tablespoon granulated garlic
- 1 teaspoon black pepper
- 4 large romaine lettuce leaves
Lemon Garlic Creme
- ½ cup raw cashews
- juice of 1 lemon
- ½ teaspoon sea salt
- 4 cloves garlic
- ½ cup water
Instructions
Vegetables
- Toss all vegetables with olive oil, salt, pepper and garlic.Frozen vegetables are precooked, so place them on the grill for 15-20 minutes.
Wash romaine lettuce and lay 4 large leaves out for wraps.
Add 1 cup of vegetables to each lettuce leaf, and drizzle with Lemon Garlic Creme.
Lemon Garlic Creme
- Blend all ingredients in high speed blender.
Notes
If you prefer to oven roast the vegetables, follow instructions for preparation, and roast for 20-25 minutes at 375 degrees.
