To make this quinoa salad, you only need 5 ingredients, (dressing also requires 5 ingredients) which makes it even more awesome. The quinoa is packed with protein and fiber, and the vegetables and dressing give it a minty, tangy kick that will make you come back for more. This salad is vegan, gluten free and dairy free.

Lemon Garlic Mint Quinoa Salad
Fresh and light, this salad is ready in less than 30 minutes and only requires 5 ingredients.
Ingredients
Quinoa Salad
- 1 cup organic quinoa
- 1 cup cherry tomatoes
- 2 cups artichokes
- ½ cup green onions
- 2 tablespoon sweet jalapeno
Lemon Mint Dressing
- ¼ cup lemon juice
- ¼ cup olive oil
- ½ tsp sea salt
- 4 cloves garlic
- 2 tablespoon fresh mint
Garnish
- 2 tablespoon green onions
- 2 tablespoon fresh mint
- 2 tablespoon toasted pecans
Instructions
Quinoa Salad
- Rinse quinoa. Add 1 cup of quinoa and 2 cups of water to Instant Pot. Cook on high pressure for 1 minute. Let pressure release for 10 minutes. If you are not cooking with an Instant Pot, cook quinoa according to package directions.
- Add tomatoes, jalapenos, green onions and artichokes to bowl and mix well. Add cooled quinoa to bowl and add dressing when salad is ready to serve.
- Garnish with mint, green onions and toasted pecans.
Lemon Mint Salad Dressing
- Add all ingredients to high speed blender and blend until smooth. Drizzle dressing on salad when you are ready to serve so that it does not get soggy.
