Lemon Garlic Mint Quinoa Salad

Ingredients

Quinoa Salad

  • 1 cup organic quinoa
  • 1 cup cherry tomatoes
  • 2 cups artichokes
  • ½ cup green onions
  • 2 tablespoon sweet jalapeno

Lemon Mint Dressing

  • ¼ cup lemon juice
  • ¼ cup olive oil
  • ½ tsp sea salt
  • 4 cloves garlic
  • 2 tablespoon fresh mint

Garnish

  • 2 tablespoon green onions
  • 2 tablespoon fresh mint
  • 2 tablespoon toasted pecans

Instructions

Quinoa Salad

  • Rinse quinoa.  Add 1 cup of quinoa and 2 cups of water to Instant Pot.  Cook on high pressure for 1 minute.  Let pressure release for 10 minutes.  If you are not cooking with an Instant Pot, cook quinoa according to package directions.
  • Add tomatoes, jalapenos, green onions and artichokes to bowl and mix well.  Add cooled quinoa to bowl and add dressing when salad is ready to serve. 
  • Garnish with mint, green onions and toasted pecans.

Lemon Mint Salad Dressing

  • Add all ingredients to high speed blender and blend until smooth.  Drizzle dressing on salad when you are ready to serve so that it does not get soggy.
