Rinse quinoa. Add 1 cup of quinoa and 2 cups of water to Instant Pot. Cook on high pressure for 1 minute. Let pressure release for 10 minutes. If you are not cooking with an Instant Pot, cook quinoa according to package directions.
Add tomatoes, jalapenos, green onions and artichokes to bowl and mix well. Add cooled quinoa to bowl and add dressing when salad is ready to serve.
Garnish with mint, green onions and toasted pecans.
Lemon Mint Salad Dressing
Add all ingredients to high speed blender and blend until smooth. Drizzle dressing on salad when you are ready to serve so that it does not get soggy.
