Although I am not an expert on Asian food, I do appreciate the cuisine, and readily admit that this is not something I learned to cook from my mother. With that said, I saw a mesmerizing video on Facebook by Chef Deuki Hong where he prepared Kimchi Fried Rice containing traditional ingredients like bacon and butter.
It looked so delicious, I really wanted to make something similar, with great spicy flavor. Here is an adapted version that is vegan, vegetarian, gluten-free, and dairy-free, inspired by him.

Tips
This vegan and vegetarian jackfruit kimchi fried rice is a spicy and flavorful dish that is made using only one pan! With only 7 ingredients it's so easy to make and here are some tips to get you started.
- Add extra vegetables like corn, peas, and carrots for added flavor and nutrition.
- Let your rice cool completely on a baking sheet for a couple of hours before using it. This lets any added moisture evaporate and prevents your rice from clumping together. Day old rice works even better!
- Use a wok or a very large skillet to allow your ingredients to cook evenly to prevent overcooking.
- The older your kimchi the better for maximum flavor.
- If you are strictly vegan please make sure to read the kimchi ingredient label to ensure there is no fish sauce.

Jackfruit actually is a fruit, and it is indigenous to India and Bangladesh. In terms of nutritional value, jackfruit is rich in fiber, vitamin C, vitamin A, magnesium, and vitamin B6. Kimchi is a traditional Korean dish typically made with a combination of vegetables, garlic, ginger, chili peppers, salt, and fish sauce. It is then pickled and fermented. There are a ton of different types of kimchi and it can be eaten as a side dish or used as a condiment.
Because jackfruit kimchi fried rice is usually made with pre-cooked rice I recommend eating this dish fresh. To save any leftovers store them in an airtight container in the fridge for 1-2 days. Use a microwave or stovetop to reheat.
