I have new Veggie Bullet Spiralizer that makes several sizes of noodles, or zoodles if you are using zucchini. Today, I wanted small zoodles, so I whipped up these thin zoodles to make the Angel Hair Zucchini Salad With Figs, Toasted Pistachios and Garlic Cream.Recipe
Angel Hair Zucchini Salad
Delicious, healthy angel hair zucchini salad will make a beautiful presentation on your table. Vegan, gluten free, dairy free
Ingredients
Salad
- 6 zucchini spiralized
- 1 cup shredded carrots
- ½ cup green onions
- ½ cup chopped dried figs
- ¼ cup toasted pistachios
Garlic Cream
- 1 cup raw cashews
- 1 cup water
- 4 cloves garlic
- juice of 1 lemon
- 1 tablespoon lemon zest
- 1 teaspoon sea salt
Instructions
Salad
- Spiralize zucchini into zoodles. If you don't have a spiralizer, use the shred blade on the food processor.
- Spiralize carrots. If you don't have a spiralizer, shred carrots using shred blade on food processor.
- Add zucchini, carrots, dried figs to large salad bowl
- Add garlic cream dressing
- Top with toasted pistachios
Garlic Cream
- Blend all ingredients for garlic cream dressing in high speed blender.
