Angel Hair Zucchini Salad. Zucchini is the most versatile vegetable on the planet, because, not only is it easy to grow, but it also enhances so many dishes with added nutrition. To name a few, zucchini is great in muffins, brownies, omelettes, tacos, salads, bread, burgers, appetizers, and of course, salads. You can find a some great choices here, both cooked and raw, if you have leftover zucchini and are looking to make a meal.
Nutritional Benefits of Zucchini
Zucchini emerged as a favorite for health conscious eaters because it was a great substitute for pasta, and could be the main staple in the dish. It is low in carbs and sugar, but offers essential nutrients including potassium, manganese, Vitamin A and Vitamin C.
Our favorite use of zucchini, is of course to make zoodles, and serve them in a salad and this is the easiest salad to make. Requiring only healthy and flavorful ingredients, this salad is ready in 20 minutes! Since zucchini has somewhat of a neutral flavor, we used dried figs to add a little sweetness, and toasted pistachios for some crunch. The tangy lemon garlic dressing gives the whole salad zing. Serve it as a main course, or as a side salad. This dish is vegan, gluten free, and dairy free.

I have new Veggie Bullet Spiralizer that makes several sizes of noodles, or zoodles if you are using zucchini. Today, I wanted small zoodles, so I whipped up these thin zoodles to make the Angel Hair Zucchini Salad With Figs, Toasted Pistachios and Garlic Cream.

Angel Hair Zucchini Salad
Ingredients
Salad
- 6 zucchini spiralized
- 1 cup shredded carrots
- ½ cup green onions
- ½ cup chopped dried figs
- ¼ cup toasted pistachios
Garlic Cream
- 1 cup raw cashews
- 1 cup water
- 4 cloves garlic
- juice of 1 lemon
- 1 tablespoon lemon zest
- 1 teaspoon sea salt
Instructions
Salad
- Spiralize zucchini into zoodles. If you don't have a spiralizer, use the shred blade on the food processor.
- Spiralize carrots. If you don't have a spiralizer, shred carrots using shred blade on food processor.
- Add zucchini, carrots, dried figs to large salad bowl
- Add garlic cream dressing
- Top with toasted pistachios
Garlic Cream
- Blend all ingredients for garlic cream dressing in high speed blender.
Steps to prepare Angel Hair Zucchini Salad:
Spiralize carrots. If you don't have a spiralizer, shred carrots in food processor.
