Vegan Blondies. Traditional blondies are brownie like and this dessert hits that sweet tooth spot without all the sugar and butter of the traditional treat. With only a few ingredients, they have a light maple flavor and added fiber from white beans. Yes, white beans! Ready in 30 minutes and definitely satisfying and delicious. Vegan, gluten free and dairy free.

Vegan Blondies
Vegan Blondies--delicious. light protein filled, snack.
Ingredients
- ¼ cup coconut oil
- ¼ cup coconut sugar
- ½ cup maple syrup divided ¼ cup in mix and ¼ cup in topping
- 1 can white beans drained
- ¼ cup applesauce
- 1 teaspoon vanilla
- 2 eggs vegetarian option, or for vegan option, egg substitute for 2 eggs. I use Follow Your Heart
- 1-¾ cup gluten free flour
- 1-½ teaspoon baking powder
- ¼ cup cacao nibs or vegan chocolate chips
Topping
- ¼ cup maple syrup
- 2 tablespoon chocolate powder
- 1-2 tablespoon of soy milk
Instructions
Blondies
- Add all ingredients to food processor except chocolate chips and topping ingredients (chocolate powder, milk and ¼ cup of maple syrup).
- Mix until beans are completely pureed
- Add chocolate chips and stir by hand, not with food processor
- Grease a 9x9 pan with coconut oil
- Pour mixture into pan
Topping
- In cup, mix ¼ cup of maple syrup, 2 tablespoon of chocolate powder and 1-2 tablespoon soy milk until smooth
- Spread onto blondies mix, and use knife to swirl chocolate through blondie mix
- Bake for 30 minutes at 325 degrees
