Tofu Vegetable Stir Fry
Tofu Noodle Stirfry. Vegan, gluten free, dairy free.
Ingredients
Tofu Stir Fry
- 4 cups shredded zucchini and or yellow squash
- 1 cup sliced mushrooms
- 1 cup chopped red or yellow pepper
- 6 cloves garlic minced
- ½ cup chopped onion
- 1 cup shredded carrots
- 1 tablespoon sea salt
- 2 tablespoon coconut oil
- 1 package extra firm tofu 14 oz
- 2 tablespoon sesame oil
- 3 tablespoon coconut aminos
- ¼ cup red chili sauce
- 1 tablespoon fresh ginger or 1 teaspoon dried ginger
- 1 box rice noodles 8 oz
Almond Sesame Sauce
- ½ cup almond butter
- 1 tablespoon sesame seeds
- ¼ cup coconut aminos
- 2 teaspoon fresh ginger or 1 teaspoon dried ginger
- 2 tablespoon chili sauce
- 2 tablespoon maple syrup
- 2 tablespoon sesame oil
- 2 tablespoon rice vinegar
- 2 cloves garlic minced
- ½ cup water or as needed to make sauce as smooth as you like it
For garnish:
- 1 tablespoon red pepper flakes
- ¼ cup sliced almonds toasted
- 2 tablespoon sesame seeds toasted
- 3 tablespoon green onions
Instructions
Tofu Stir Fry
- Sprinkle sea salt on zucchini/yellow squash and let set 15 minutes. Use clean towel to squeeze excess water from zucchini/squash.
- Stir fry zucchini/squash,mushrooms, red pepper, garlic, onions and carrots in coconut oil for 3 minutes on high.
- Drain any water that has accumulated from pan.
- Squeeze excess water from tofu and crumble.
- Add tofu, sesame oil, chili sauce, coconut aminos and ginger and saute for an additional 3 minutes.
Rice Noodles
- Add rice noodles to boiling water according to package directions. Do not over cook. Drain noodles and run water over them to avoid sticking
Almond Sesame Sauce
- Add all ingredients to pot and cook on medium heat, stirring until smooth and thoroughly mixed, approximately 3-5 minutes.
- Assemble dish:
- Place rice noodles on plate
- Add Tofu Vegetable Stirfry
- Top with Almond Sauce
- Sprinkle red pepper flakes (according to how spicy you like your dish)
- Sprinkle toasted almonds, sesame seeds and green onions.
