Tofu Stir Fry

yellow squash

Almond Sesame Sauce

almond butter

chili sauce

or as needed to make sauce as smooth as you like it
For garnish:

Instructions
Tofu Stir Fry
Sprinkle sea salt on zucchini/yellow squash and let set 15 minutes. Use clean towel to squeeze excess water from zucchini/squash.
Stir fry zucchini/squash,mushrooms, red pepper, garlic, onions and carrots in coconut oil for 3 minutes on high.
Drain any water that has accumulated from pan.
Squeeze excess water from tofu and crumble.
Add tofu, sesame oil, chili sauce, coconut aminos and ginger and saute for an additional 3 minutes.
Rice Noodles
Add rice noodles to boiling water according to package directions. Do not over cook. Drain noodles and run water over them to avoid sticking
Almond Sesame Sauce
Add all ingredients to pot and cook on medium heat, stirring until smooth and thoroughly mixed, approximately 3-5 minutes.
Assemble dish:
Place rice noodles on plate
Add Tofu Vegetable Stirfry
Top with Almond Sauce
Sprinkle red pepper flakes (according to how spicy you like your dish)
Sprinkle toasted almonds, sesame seeds and green onions.
