Ingredients

¾ cup arborio rice
1 15oz can coconut milk
½ teaspoon vanilla
1 teaspoon lemon juice juice of 1 lemon
½ cup shredded coconut
1-½ cup water
¼ cup maple syrup
½ teaspoon sea salt
1 tablespoon pomegranate seeds for garnish

Instructions

Add all ingredients to Instant Pot. Pressure Cook for 20 minutes. Let steam release naturally and remove lid.
Stir coconut pudding. If you prefer a smooth pudding, blend with small hand blender. Serve topped with pomegranate seeds
