Maple Coconut Risotto Pudding
Smooth and creamy and ready in 30 minutes, this Maple Coconut Risotto Pudding is the perfect snack or dessert any time of the day.
Ingredients
- ¾ cup arborio rice
- 1 15oz can coconut milk
- ½ teaspoon vanilla
- 1 teaspoon lemon juice juice of 1 lemon
- ½ cup shredded coconut
- 1-½ cup water
- ¼ cup maple syrup
- ½ teaspoon sea salt
- 1 tablespoon pomegranate seeds for garnish
Instructions
- Add all ingredients to Instant Pot. Pressure Cook for 20 minutes. Let steam release naturally and remove lid.
- Stir coconut pudding. If you prefer a smooth pudding, blend with small hand blender. Serve topped with pomegranate seeds
