Zoodles and Things With Basil Cream. Zoodles, the healthy alternative to pasta! I just got a new spiralizer, so, I decided that I must have some zoodles. Zucchini is a somewhat bland vegetable, but when it is topped with Basil Cream Sauce, it is excellent. We combined the zoodles with tomatoes, pickled cabbage, rice noodles, carrots and topped with Basil Cream and toasted pine nuts. Great for lunch or dinner. Vegan, gluten free, dairy free.

Zoodles and Things With Basil Cream
Zoodles and Things With Basil Creme. Great combination of healthy, fresh and flavorful. Vegan, gluten free, dairy free
Ingredients
Salad
- 2 zucchini
- ½ cup carrots
- ½ cup purple cabbage pickled, purple
- ¼ cup pine nuts toasted
- ½ cup rice noodles cooked
- ½ cup cherry tomatoes
Basil Cream Sauce
- 1 cup raw cashews soaked
- 4 cloves garlic
- 1 cup of water
- 1 teaspoon salt
- juice of 1 lemon
- 2 tablespoon lemon zest
- 2 cups basil
Instructions
Salad
- Sprialize zucchini and place in circular pattern on round plate
- Shred carrots and mix with rice noodles and cabbage
- Place in center of zucchini
- Slice cherry tomatoes and place around center
- Top with toasted pine nuts
Basil Cream
- Mix all ingredients in blender until smooth
