Chocolate Zucchini Brownie Bites. Sometimes you just need a little chocolate, a little dessert, a little something sweet. These brownie bites are going to do it for you--the zucchini adds a touch of nutrition, and they are very low in sugar. Mix them up in one bowl, and they are ready in 30 minutes. Vegan, gluten free and dairy free.

Chocolate Zucchini Brownie Bites
Chocolate Zucchini Bites. Vegan, gluten free, dairy free. Scrumptious little snack!
Ingredients
Brownies
- 1 cup gluten free flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- 4 oz organic applesauce
- ½ cup cocoa or cacao powder
- ⅛ cup coconut oil
- ¼ cup coconut sugar
- 1 teaspoon vanilla
- 1 cup finely shredded zucchini
Maple Glaze
- 2 tablespoon cocoa or cacao powder
- 2 teaspoon maple syrup
- 2 tablespoon cacao nibs
Instructions
- Mix all ingredients except zucchini.
- Add zucchini
- Line cookie sheet with parchment paper
- Scoop out 1 tablespoon size bites and roll into balls
- Bake for 20- 25 minutes at 350 degrees
- After cooling, drizzle with Maple Glaze
- Top with cacao nibs
- Makes 18 1 tablespoon size bites
