If I was stranded on a desert island, the only three stores that I would need would be Home Depot, Michael’s (Crafts) and Barnes and Noble.  I love making both useless and useful things from goodies that I find at the craft store and could entertain myself for years with all the projects that I find there.  This week, it is the jewelry aisle .  I really don’t like spending a lot of money on jewelry, especially when most of my wardrobe these days is casual.  I have found that you can create trendy jewelry at home and have a lot of fun.  Of course, when I see the choices, I must make something in every color

Superfood Breakfast Bowl

Ingredients

    Chia Pudding
  • 1 cup almond milk
  • 1 tsp vanilla powder
  • 2 tbsp maple syrup
  • 1/4 cup chia seeds
  • Toppings
  • 3 tbsp goji berries
  • 3 tbsp chocolate crisps
  • 2 tsp toasted coconut
  • 1 sliced kiwi

Instructions

  1. Mix all chia pudding ingredients in a glass jar and let set for 2 hours
  2. Place sliced kiwi, goji berries, toasted coconut and chocolate crisps on top of vanilla chia pudding

Matcha Chai Latte

Starting the day out with homemade Matcha Chai Latte made with non dairy milk and a variety of spices will greatly increase the chances that it will be a great day. Making your own chai means that you can treat yourself whenever you need to, and it won’t be loaded with preservatives and sugar.    Vegan, gluten free and dairy free.
Serve with Pumpkin Cranberry Bread.

Matcha Chai

Ingredients

    For each cup of 12oz matcha chai:
  • 12 ounces of coconut, soy or almond milk
  • 1 tbsp matcha
  • 1/2 tsp cardamon
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • pinch cloves
  • 2 tbsp maple syrup

Instructions

  1. Heat milk in pot, and add matcha, spices and maple syrup.
  2. Add mixture to small blender and blend until smooth.

Salmon Kale With Maple Glazed Beets

Most who strive for a vegan or vegetarian lifestyle inevitably cook for, or entertain friends or family who don’t follow that diet.  I don’t cook meat, but found these awesome tasting gluten free salmon patties at Costco, and since then, no other measures up.  I always make a salad with the salmon, and add a variety of ingredients to up the nutritional value.  This day, I added kale, leeks, pine nuts and these amazing glazed beets.  No other dressing was even necessary.

Oatmeal Berry Breakfast Bowl

Oatmeal Bowl

I whipped this breakfast bowl up in about 10 minutes.  By the time I got finished with the photos however, it was all cold.  I popped it into the toaster oven, and….the chocolate melted!  I have never combined oatmeal, berries and chocolate, but you must try adding just a few nibs.  With the protein, fiber, antioxidants and vitamins that the other ingredients bring to the table, there is nothing wrong with a little sweet chocolate deliciousness.
