Quinoa
- 1 cup cooked quinoa
- ½ cup chopped basil
- 4 cloves of garlic chopped
- 1 tablespoon coconut oil
- ½ cup pureed mango
- pinch of sea salt to taste
Pumpkin Seeds
- ¼ cup pumpkin seeds
- drizzle of coconut oil
- ¼ teaspoon red pepper flakes
Quinoa
Saute garlic and basil in coconut oil
Add cooked quinoa and stir-fry 4-5 minutes
Add pureed mango and cook an additional 2 minutes
Sprinkle with toasted pumpkin seeds
Pumpkin Seeds
Drizzle coconut oil on pumpkin seeds
Sprinkle with red pepper flakes
Toast in toaster oven until slightly brown
