Ingredients

Grilled Pineapple

  • 6 slices of cored pineapple
  • ¼ cup maple syrup
  • 1 teaspoon sea salt
  • 3 tablespoon coconut oil+ more for oiling grill

To make slaw:

  • 3 cups purple cabbage

Cilantro Lime Dressing

  • ¼ cup fresh cilantro
  • ¼ cup raw cashews soaked
  • ½ teaspoon sea salt
  • ¼ cup of water
  • juice of 1 lime
  • 3 tablespoon maple syrup

Instructions

  • Mix 6 slices of pineapple with salt, maple syrup, coconut oil in bowl
  • Oil the grill with coconut oil
  • Grill the pineapple for 3-4 minutes on each side. As maple syrup carmelizes, use brush to spread it on the pineapple as it cooks
  • Remove pineapple from grill and cut into bite size pieces
  • Mix pineapple with cabbage in bowl

Cilantro Lime Dressing

  • Mix all ingredients in blender until smooth
  • Drizzle Cilantro Lime Dressing on pineapple and cabbage and serve
