Ingredients
Grilled Pineapple

of cored pineapple

maple syrup

teaspoon
sea salt

coconut oil+ more for oiling grill
To make slaw:

cups
purple cabbage
Cilantro Lime Dressing
¼
cup
fresh cilantro
¼
cup
raw cashews
soaked
½
teaspoon
sea salt
¼
cup
of water
juice of 1 lime

tablespoon
maple syrup
Instructions
Mix 6 slices of pineapple with salt, maple syrup, coconut oil in bowl
Oil the grill with coconut oil
Grill the pineapple for 3-4 minutes on each side. As maple syrup carmelizes, use brush to spread it on the pineapple as it cooks
Remove pineapple from grill and cut into bite size pieces
Mix pineapple with cabbage in bowl
Cilantro Lime Dressing
Mix all ingredients in blender until smooth
Drizzle Cilantro Lime Dressing on pineapple and cabbage and serve
