1can15 oz organic jackfruit
3tablespoonolive oil
1teaspoonsea salt
1teaspoonsmoked paprika
6corn tortillas
Bean Dip (if you don't have time or ingredients for bean dip, you can use prepared bean dip, or hummus)
1can15 oz black beans
¼cuppeanut butter
½cupfreshchopped cilantro
juice of 1 lime
2tablespoonolive oil
4clovesgarlic
1teaspoonground cumin
¼teaspoonred pepper
½teaspoonsea salt
Taco Toppings
1cupsauerkraut
¼cupsweet jalapeno peppers
1avocadosliced
2cupsmixed greens
Red pepper flakes
Instructions
Tacos
Drain jackfruit and chop into bite size pieces.
Toss jackfruit with salt, olive oil and smoked paprika in bowl.
Grill (or pan stir fry) the jackfruit for five minutes on each side.
Bean Dip
Drain beans.
Mix all ingredients in high speed blender.

Heat your tortillas on the grill or pan for 1 minute on each side
