6cupswater
2cupsminced cauliflower
2cupssliced mushrooms
½cupred onion, chopped
2tablespoonolive oil
4ozcan green chiles, drained
½teaspoonchipotle pepper
1teaspoonsea salt
1teaspoongranulated garlic
Chipotle Cashew Creme Sauce
½cupraw cashews, soaked
½cupwater
¼teaspoonsea salt
½tsp chipotle pepper
½teaspoonMrs. Dash Southwest Seasoning
1tablespoonlime juice, juice of 1 lime
2clovesfresh garlic
Instructions
Pasta Bowl
Add water and lentil pasta. Set to "pressure cook" for 3 minutes. As soon as pressure cooking is finished, cover vent with light towel, and QR pressure, quick release. Immediately remove pasta, pour into colander to drain, and rinse with cold water. *If not using Instant Pot, cook pasta according to package directions.
Add olive oil, cauliflower, mushrooms and onion to Instant Pot inner pot and set to "saute". Saute for 5 minutes or under vegetables are tender. Add green chiles.
Add lentil pasta and mix well. Pour pasta with vegetables into large serving bowl. Top with chipotle cashew creme sauce and stir. Garnish pasta with garlic chives or herbs.
Chipotle Cashew Creme Sauce
Add all ingredients to high speed blender and blend until smooth. Serve over pasta and vegetables.
