¾cupQuinoa /Riceuse Seeds of Change precooked quinoa/rice
½cupgrilled red peppers
½cupgrilled yellow peppers
½cupcooked or pickled Red cabbage
½cupsun dried tomatoes
½cupgrilled brussel sprouts
½baked sweet potato
¼cupolive oil
salt and pepper
Instructions
Using large baking pan, drizzle olive oil and salt and pepper on mushrooms, red/yellow peppers, mushrooms and Brussel sprouts. Wash and pierce sweet potato and bake in oven with vegetables.
Bake at 375 for 30 minutes or until cooked
Build your bowl by adding mushrooms, peppers, cabbage, sun dried tomatoes, quinoa/rice, brussel sprouts.
