Ingredients

  • 1 cup quinoa, rinsed
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries OR blackberries
  • ½ teaspoon sea salt
  • ¼ cup maple syrup
  • 1 ¾ cup almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoon pumpkin seeds, toasted optional

Instructions

  • Add quinoa, spices, berries, maple syrup to Instant Pot.  Stir and add almond milk.   
  • Set Instant Pot to pressure cook for 8 minutes.  Let steam naturally release until completely vented. 
  • Serve topped with toasted pumpkin seeds and sliced strawberries.
