Instant Pot French Apple Cobbler
Delicious, vegan, gluten free and dairy free French Apple Cobbler.

Ingredients
Apple Mixture
- 4 cups sliced apples
- ½ cup coconut sugar
- 1 teaspoon cinnamon
- ½ teaspoon sea salt
- 1 teaspoon vanilla
- ¼ cup water
Cobbler
- ¾ cup gluten free flour
- ¼ cup coconut sugar
- 1 teaspoon sea salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 4 oz applesauce
- ¼ cup maple syrup
Instructions
- Mix all ingredients for apple mixture in large bowl, making sure that all apples are coated with mixture. Pour apple mixture into bowl that will fit in Instant Pot on trivet. For my 6 quart IP, that is about 8" or 1.5 quart bowl.
- In separate bowl, mix all ingredients for cobbler topping.
- Pour cobbler mix on top of apple mixture.
- Add 2 cups of water to bottom Instant Pot inner pot (not bowl with cobbler ingredients) and place bowl on trivet rack and into Instant Pot.
- Pressure cook for 25 minutes and let pressure release naturally until the vent goes down. NR. This release can take 20-25 minutes
- Remove bowl and trivet carefully from Instant Pot
- If you desire a crispy top, place bowl under broiler until desired crisp is achieved. (Approximately 5 minutes, but watch carefully).
