Equipment

  • Instant Pot

Ingredients

  • 4 cups spinach or greens
  • 1 cup arugula lettuce
  • 1 cup blueberries
  • 3 peaches, sliced
  • 1 cup raspberries
  • 1 red/yellow pepper, sliced I used a Fiesta Pepper that I found at Trader Joe's
  • ¼ cup red onion, chopped
  • ¼ cup toasted pistachios
  • 2 tablespoon fresh mint
  • 1 cup quinoa
  • ¼ cup maple syrup
  • ½ teaspoon sea salt
  • 1 ½ cup almond milk

Instructions

  • Add quinoa, maple syrup, sea salt and almond milk to bowl and stir well. If using Instant Pot, cook on high pressure for 8 minutes; let pressure release naturally, approximately 15 minutes. If NOT using the Instant Pot, cook according to package directions.
  • Add spinach, arugula, blueberries, raspberries, pepper, onions and peaches to salad bowl. Top with pistachios, mint and dressing.

Notes

Notes:  I used a lemon dressing with this salad, but you can use your favorite.  My recipe included ¼ cup of olive oil, juice of 1 lemon, 2 tablespoon white balsamic vinegar, 1 teaspoon lemon zest and salt and pepper to taste.  Blend in small blender.
