Chipotle Lentil Pasta Instant Pot

Protein packed lentil pasta topped with a creamy chipotle sauce make a yummy dish that is perfect for lunch, dinner or leftovers.

Pasta Bowl

  • 12 oz package, gluten free lentil pasta I used Trader Joe's
  • 6 cups water
  • 2 cups minced cauliflower
  • 2 cups sliced mushrooms
  • ½ cup red onion, chopped
  • 2 tablespoon olive oil
  • 4 oz can green chiles, drained
  • ½ teaspoon chipotle pepper
  • 1 teaspoon sea salt
  • 1 teaspoon granulated garlic

Chipotle Cashew Creme Sauce

  • ½ cup raw cashews, soaked
  • ½ cup water
  • ¼ teaspoon sea salt
  • ½ tsp chipotle pepper
  • ½ teaspoon Mrs. Dash Southwest Seasoning
  • 1 tablespoon lime juice, juice of 1 lime
  • 2 cloves fresh garlic


Pasta Bowl

  • Add water and lentil pasta.  Set to "pressure cook" for 3 minutes.  As soon as pressure cooking is finished, cover vent with light towel, and QR pressure, quick release.  Immediately remove pasta, pour into colander to drain, and rinse with cold water.  *If not using Instant Pot, cook pasta according to package directions.
  • Add olive oil, cauliflower, mushrooms and onion to Instant Pot inner pot and set to "saute".  Saute for 5 minutes or under vegetables are tender.  Add green chiles.
  • Add lentil pasta and mix well.  Pour pasta with vegetables into large serving bowl.  Top with chipotle cashew creme sauce and stir.  Garnish pasta with garlic chives or herbs.

Chipotle Cashew Creme Sauce

  • Add all ingredients to high speed blender and blend until smooth.  Serve over pasta and vegetables.
