Ingredients

  • With most ingredients in this bowl you can eat them cooked or raw. Assemble your bowl as follows:
  • ½ red pepper sliced
  • ½ yellow pepper sliced
  • 2 tablespoon olive oil for stirfry
  • ½ cup brown rice or quinoa, I use Seeds of Change precooked rice/quinoa
  • ½ cup maple glazed beets if you don't have time to cook beets, use fresh beets
  • ½ cup sun dried tomatoes or fresh tomatoes
  • ½ cup sauerkraut with or without pickles
  • ½ cup pinto beans or adzuki beans
  • ¼ cup bean sprouts
  • 6 slices mini cucumbers
  • 6 slices mango
  • 1 tablespoon dulse flakes
  • This bowl is assembled with all of the above ingredients. Some take time to cook but if you don't have time to make Maple Glazed Beets, use fresh beets. If you don't have time to make Sun Dried Tomatoes, use fresh tomatoes.

Instructions

  • Red and yellow peppers: Stirfry on medium high heat in olive oil until tender. Approximately 5 minutes. Alternative: Grill peppers on grill or serve raw
  • Beans and rice/quinoa: Since they are pre-cooked, heat throughly in pan
  • Maple Glazed Beets: Find recipe here. greenschemetv.net/maple-glazed-beets/
  • Add Sun dried tomatoes
  • Slice, cucumbers, mangos
  • Sprinkle beans sprouts and dulse flakes on bowl
