Ingredients

Veggie Balls

  • 1 cup chopped red pepper
  • 1 sweet potato shredded
  • 2 cups of minced cauliflower
  • 2 cups chopped mushrooms
  • 2 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon sea salt
  • 1 tablespoon red pepper flakes
  • 2 tablespoon flax seed ground
  • 2 teaspoon chia seeds
  • 3 tablespoon almond flour
  • ¼ cup aquafaba

Hot Peanut Dressing

  • ½ cup peanut butter
  • ¼ cup coconut aminos
  • ¼ cup maple syrup
  • juice of 1 lime
  • 4 cloves garlic
  • 1 teaspoon sea salt
  • 1 tablespoon red curry paste

Instructions

Veggie Balls

  • Saute garlic in olive oil; add all vegetables and stirfry for 5 minutes. Add salt and red pepper.
  • Let cool.
  • Add remaining ingredients and mix.
  • Form veggie balls with small scoop.
  • Bake at 375 degrees for 30 minutes.

Hot Peanut Dressing

  • Blend all ingredients in high speed blender until smooth.
  • Serve. Makes approximately 24 small balls.
