Homemade Vegan Queso Dip is the most amazing dairy free queso dip. The flavors are perfect for chips and vegetables, or added to tacos, burritos or bowls.

Ingredients

  • ¼ cup raw cashews, soaked for 10 minutes in hot water
  • 1 teaspoon sea salt
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon smoked paprika
  • ½ tsp granulated garlic
  • 1 tablespoon corn starch
  • 2 tablespoon tapioca flour
  • cup coconut oil
  • 2 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 2 tablespoon nutritional yeast
  • 1 ½ cup water
  • 1 tablespoon green chiles, canned optional

Instructions

  • Add all ingredients (except green chiles) to high speed blender and blend until smooth.
  • Pour mixture into pot and cook on medium high heat until thickened, stirring continually so that it doesnt stick. This will take approximately 5 minutes.
  • Pour dip into bowl and serve. Top with red pepper flakes or green chiles if you want more heat or spice.

Notes

This dip is amazing to serve with chips, vegetables or to add to tacos, burritos or bowls.  I am actually also using it tonight on pizza!
