Ingredients

Bars

  • 2 cups of gluten free oats
  • 1 -½ cup gluten free granola I used Udi's
  • ½ cup dried shredded coconut
  • 1 tablespoon chia seeds
  • ½ teaspoon sea salt
  • ½ cup peanut butter
  • ½ cup maple syrup
  • 2 teaspoon vanilla
  • ½ cup dried mulberries or whatever dried berries you prefer

Coconut Glaze

  • 1 cup of raw cashews
  • 1 cup of water
  • ½ teaspoon sea salt
  • ½ cup dried shredded coconut
  • ¼ cup maple syrup

Instructions

Bars

  • Mix all ingredients in 1 bowl.
  • Microwave for 1 minute. Stir until all dry ingredients are mixed.
  • Lightly brush coconut oil on bottom of 9x13 pan, or line pan with paper; pour ingredients into pan and press.
  • Freeze for 1 hour.

Coconut Glaze

  • Blend all ingredients in high speed blender.
  • After freezing bars for 1 hour, pour coconut glaze on bars and freeze for another hour.
  • Slice into bars and serve. Store left over bars in the freezer because they will melt if left out for too long.
