Rainbow Spring Rolls. Summer is coming, and we want something cool and fresh to eat. A quick trip to the Farmer’s Market, and you are all set to whip up these spring rolls in less than 30 minutes. We used red pepper, cucumber, avocado, mango, carrots, green onions and purple cabbage, but these spring rolls are so versatile–whatever fruits and vegetables you have available can be added to change up the flavor. Paired with almond cilantro dipping sauce, this is a perfect summer lunch, dinner or snack. Of course, they are completely gluten free, dairy free and vegan.
Spicy Smoked Vegan Taco With Garlic Cashew Cream. I think that the best food can be found inside of a taco. There are so many varieties of tacos, and they can be tossed together quickly with whatever ingredients you have on hand. Since going gluten free, corn tortillas have been essential to my feeling that I can still love food without being deprived. Staying with my main theme of trying to fit as much nutrition into a square inch as possible, I have combined cauliflower, sweet potatoes and brussel sprouts for a delicious and filling taco base. We have spiced it with with garlic, smoked paprika, chipotle and the best fats–avocado and cashews. I had no idea how they were going to turn out, but seriously, these tacos bring the flavor.
Superfood Breakfast Bowl. Breakfast is the perfect time for a bowl of superfoods, full of flavor and nutrients. It will help you start your day off right, with energy and focus. Chia seeds, goji berries, coconut with kiwi, almond milk and a little chocolate makes for a yummy breakfast with protein, vitamins, antioxidants and fiber. If you are feeling sluggish, you can also whip up this bowl any time of the day for a nutrition boost. Vegan, gluten free, dairy free.
Matcha Chai Latte. Starting the day out with homemade Matcha Chai Latte made with non dairy milk and a variety of spices will greatly increase the chances that it will be a great day. Making your own chai means that you can treat yourself whenever you need to, and it won’t be loaded with preservatives and sugar. Vegan, gluten free and dairy free.

Chipotle Cashew Dip. Not everyone in my family is on board with the plant based, gluten free, healthy diet. Accordingly, when we make food, we often have to make it healthy without sacrificing taste. This Chipotle Cashew Dip is the best! Recently, I had an informal get together with friends, and I made this dip. No one knew that it was vegan, gluten free and dairy free–all they knew was that they kept coming back for that tangy spicy flavor. The ultimate compliment? Asking for the recipe. This is a quick dish to make. Serve with tortilla chips or raw vegetables.
