Rainbow Spring Rolls

Rainbow Spring Rolls. Summer is coming, and we want something cool and fresh to eat.  A quick trip to the Farmer’s Market, and you are all set to whip up these spring rolls in less than 30 minutes.  We used red pepper, cucumber, avocado, mango, carrots, green onions and purple cabbage, but these spring rolls are so versatile–whatever fruits and vegetables you have available can be added to change up the flavor.   Paired with almond cilantro dipping sauce, this is  a perfect summer lunch, dinner or snack.  Of course, they are completely gluten free, dairy free and vegan.

Superfood Breakfast Bowl

Superfood Breakfast Bowl.  Breakfast is the perfect time for a bowl of superfoods, full of flavor and nutrients.  It will help you start your day off right, with energy and focus.  Chia seeds, goji berries, coconut with kiwi, almond milk and a little chocolate makes for a yummy breakfast with protein, vitamins, antioxidants and fiber.  If you are feeling sluggish, you can also whip up this bowl any time of the day for a nutrition boost.   Vegan, gluten free, dairy free.

Acai-Tini

Acai-Tini.  I frequently stalk the local Goodwill store and thrift shops for things to reuse and re-purpose, including glasses or dishes for my food and drink creations.  I found these glasses at Goodwill, and had to make a healthy, alcohol free, drink to highlight their beauty. Acai juice, hemp seeds, pomegranate seeds and other good things make this a delicious, refreshing drink.  You can serve this drink as a snack or with a meal for a light, refreshing snack.  Vegan, gluten free, dairy free.

Chipotle Cashew Dip

Chipotle Cashew Dip.  Not everyone in my family is on board with the plant based, gluten free, healthy diet.  Accordingly, when we make food, we often have to make it healthy without sacrificing taste.  This Chipotle Cashew Dip is the best!  Recently, I had an informal get together with friends, and I made this dip.  No one knew that it was vegan, gluten free and dairy free–all  they knew was that they kept coming back for that tangy spicy flavor.  The ultimate compliment?  Asking for the recipe.  This is a quick dish to make.  Serve with tortilla chips or raw vegetables.
