Zoodles and Things With Basil Cream. Zoodles, the healthy alternative to pasta! I just got a new spiralizer, so, I decided that I must have some zoodles. Zucchini is a somewhat bland vegetable, but when it is topped with Basil Cream Sauce, it is excellent. We combined the zoodles with tomatoes, pickled cabbage, rice noodles, carrots and topped with Basil Cream and toasted pine nuts. Great for lunch or dinner. Vegan, gluten free, dairy free.
Mango Kiwi Chocolate Chia Dessert, a vegan, gluten free, dairy free treat. Looking for a dessert that you can make with whatever you have around the kitchen? This is it! If you have chia seeds and nut milk, you can whip up the chocolate chia pudding. Layer with whatever fruit you have, some coconut yogurt and top with the superfoods that you love. Jackfruit Taco With Portobello Mushroom . I had never even heard of jackfruit until a few weeks ago–it has a weird name, and seemed like a food that could only be used as a fruit. I was so pleasantly surprised to find out that jackfruit can be used in a main dish, and is actually delicious. Fun Fact: it is a species of the mulberry and fig trees and is rich in protein, potassium, calcium, and iron How yum is that? We made jackfruit tacos with both corn tortillas and portobello mushroom buns. Amazingly, they were delicious and we felt like we had had a gourmet meal.
Blueberry Banana Nice Cream. It is amazing how nice cream made from fresh fruit tastes so much better than traditional dairy ice cream. Blueberries, frozen bananas, topped with all the goodies that you have in the pantry, and you will have an awesome parfait. Feel free to mix it up with other fruits, and toppings–makes for a perfect nice cream bar for kids. It is healthy, delicious, vegan, gluten free and dairy free.
