Chipotle Cashew Dip. Not everyone in my family is on board with the plant based, gluten free, healthy diet. Accordingly, when we make food, we often have to make it healthy without sacrificing taste. This Chipotle Cashew Dip is the best! Recently, I had an informal get together with friends, and I made this dip. No one knew that it was vegan, gluten free and dairy free–all they knew was that they kept coming back for that tangy spicy flavor. The ultimate compliment? Asking for the recipe. This is a quick dish to make. Serve with tortilla chips or raw vegetables.
Zucchini Kale Lasagna. If you are taking big carbs like pasta out of your diet for some reason, (and there are many), it is great to have a pasta free lasagna that is as scrumptious and satisfying as an all you can eat pasta buffet….. ..without the calories, fat, carbs or gluten. With yellow squash, zucchini, kale, basil, onions, garlic, and red pepper for a kick, this Zucchini Lasagna is all you need.
Chocolate Chia Raspberry Bowl. I am now loving bowls. Breakfast bowls, lunch bowls, dinner bowls, dessert bowls. All the bowls. It is a neat way to combine many healthy foods into a delicious and nutritious (which are both essential…must be delicious and good for you) meal. For breakfast, I whipped up this chocolate chia pudding bowl, which starts with the amazing goodness of chia and adds a little decadent chocolate. Hey, adding decadent does not take away any of the nutritional value of the bowl. I add a little yogurt for protein, some favorite fruits and toppings, and this beauty emerged. Vegan, gluten free, dairy free.
Quinoa Chipotle Burger. If you are craving a burger, and want to try something that is new and completely fulfilling, you must give quinoa burgers a shot. The quinoa, beans, chia and flax seed pack an abundance of protein and fiber, as well as other nutrients. The chipotle seasoning and sauce give the burger a tangy hot and spicy flavor that will make you forget that it is so healthy. To keep it gluten free, we added grilled portobello mushrooms for the bun, and built our burger with avocado and carmelized onions. Yum, is all I can say, but judge for yourself.
Matcha Chia Breakfast Parfait. One of the the most important things to me in pursuing a super healthy lifestyle, is that I don’t want to feel deprived. I want to enjoy my food and look forward to making and eating recipes that excite me. I don’t care about eating meat, or even chips, but sugar and chocolate, well, I love them. This breakfast parfait has so much nutritional value and has a little sweetness to make it feel like you are seriously eating dessert for breakfast. Vegan, gluten free, dairy free.
