Acai-Tini

I frequently stalk the local Goodwill store and thrift shops for things to reuse and repurpose, including glasses or dishes for my food and drink creations.  I found this set of glasses at Goodwill, and had to make a healthy, alcohol free, drink to highlight their beauty.

Ingredients

  • 8 oz acai juice
  • 4 oz greek or coconut yogurt
  • 2 tbsp hemp seeds
  • 2 tbsp pomegrantae seeds
  • 1 pc chocolate bark

Instructions

  1. put yogurt in bottom of triangle shaped glass, as shown
  2. pour acai juice on top and drop pomegranate seeds in gently; slightly swirl with fork
  3. sprinkle hemp seeds on top

Maple Almond Crusted Tofu

Ingredients

  • 12 oz firm tofu
  • 1/2 cup maple syrup, or honey
  • 1/2 cup finely chopped toasted almonds
  • 1/2 tsp sea salt
  • 1 sweet potato sliced
  • 2 tbsp coconut oil

Instructions

  1. Slice tofu
  2. Mix maple syrup and sea salt
  3. Roll each slice of tofu in the maple syrup and then roll in almonds until completely covered
  4. Place tofu on tin foil brushed with coconut oil and bake at 375 for 30 minutes
  5. Place sliced sweet potato in pan and brush with coconut oil and bake at 375 for 45 minutes

Chocolate Chia Raspberry Bowl

I am now loving bowls.  Breakfast bowls, lunch bowls, dinner bowls, dessert bowls.  All the bowls.  It is a neat way to combine many healthy foods into a delicious and nutritious (which are both essential…must be delicious and good for you) meal.  For breakfast, I whipped up this chocolate chia pudding bowl, which starts with the amazing goodness of chia and adds a little decadent chocolate.  Hey, adding decadent does not take away any of the nutritional value of the bowl.  I add a little yogurt for protein, some favorite fruits and toppings, and this beauty emerged.

Quinoa Chipotle Burger

If you are craving a burger, and want to try something that is new and completely fulfilling,  you must give quinoa burgers a shot.  The quinoa, beans, chia and flax seed pack an abundance of protein and fiber,  as well as other nutrients.  The chipotle seasoning and sauce give the burger a tangy hot and spicy flavor that will make you forget that it is so healthy.  To keep it gluten free, we added grilled portobello mushrooms for the bun, and built our burger with  avocado and carmelized onions.  Yum, is all I can say, but judge for yourself.  Read more…

Matcha Chia Breakfast Parfait

One of the the most important things to me in pursuing a super healthy lifestyle, is that I don’t want to feel deprived.  I want to enjoy my food and look forward to making and eating recipes that excite me.  I don’t care about eating meat, or even chips, but sugar and chocolate, well, I love them.  This breakfast parfait has so much nutritional value and has a little sweetness  to make it feel like you are seriously eating dessert for breakfast.
