When I started eating gluten free in 2008, there were not many options for gluten free food that were tolerable. Since then, I have discovered many delicious products that accommodate a gluten free diet, and that includes pizza. Admittedly, gluten free pizza is not as fluffy as traditional pizza, but we no longer have to avoid this favorite comfort food and there are infinite options for creating amazing flavors. For the Thai flavors, we start with a tangy peanut butter sauce, top with a sweet pineapple tofu cream, add shredded broccoli, carrots, bean sprouts, roasted garlic and sliced pineapple. Most who strive for a vegan or vegetarian lifestyle inevitably cook for, or entertain friends or family who don’t follow that diet. I don’t cook meat, but found these awesome tasting gluten free salmon patties at Costco, and since then, no other measures up. I always make a salad with the salmon, and add a variety of ingredients to up the nutritional value. This day, I added kale, leeks, pine nuts and these amazing glazed beets. No other dressing was even necessary.
I am now loving bowls. Breakfast bowls, lunch bowls, dinner bowls, dessert bowls. All the bowls. It is a neat way to combine many healthy foods into a delicious and nutritious (which are both essential…must be delicious and good for you) meal. For breakfast, I whipped up this chocolate chia pudding bowl, which starts with the amazing goodness of chia and adds a little decadent chocolate. Hey, adding decadent does not take away any of the nutritional value of the bowl. I add a little yogurt for protein, some favorite fruits and toppings, and this beauty emerged.
If you are craving a burger, and want to try something that is new and completely fulfilling, you must give quinoa burgers a shot. The quinoa, beans, chia and flax seed pack an abundance of protein and fiber, as well as other nutrients. The chipotle seasoning and sauce give the burger a tangy hot and spicy flavor that will make you forget that it is so healthy. One of the the most important things to me in pursuing a super healthy lifestyle, is that I don’t want to feel deprived. I want to enjoy my food and look forward to making and eating recipes that excite me. I don’t care about eating meat, or even chips, but sugar and chocolate, well, I love them. This breakfast parfait has so much nutritional value and has a little sweetness to make it feel like you are seriously eating dessert for breakfast.
