Jackfruit Tacos With Grilled Portobello Mushroom Bun

Ingredients

    Jackfruit
  • 1 can of jackfruit, not packed in syrup
  • 2 tomatoes, chopped
  • 1/2 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup sriracha sauce
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 3 tbsp maple syrup
  • Cashew Garlic Sauce
  • 1 cup cashews, soaked
  • 4 cloves garlic
  • juice of 1 lemon
  • 2 tsp lemon zest
  • tsp sea salt

Instructions

    Jackfruit
  1. Saute onion and garlic in olive oil.
  2. Add tomatoes, maple syrup, spices and sriracha sauce and simmer for 30 minutes.
  3. Pull jackfruit apart with fork.
  4. Cashew Garlic Sauce
  5. Blend all ingredients in blender
  6. We added pickled cabbage and avocado to grilled corn tortillas and the jackfruit and topped with cashew garlic sauce. We also grilled a portobello mushroom bun and added the same ingredients.
