Grilled Butternut Sage Pasta. As I mentioned in my previous posts, I am on a grilling kick. I think that everything is better, cooked on the grill. It isn’t summer yet, but my grill cooks indoors and outdoors, so I don’t have to wait if I get inspired to make something. This grilled butternut sage pasta was an inspiration. With only 8 ingredients, I tossed the vegetables on the grill, cooked the pasta, and made the pasta sauce with part of the grilled vegetables. So easy, so flavorful and done in thirty minutes, and vegan, gluten free and dairy free.
Vegan Banana Blackberry Bread. Banana bread has always been a favorite in our house. But, when you have been used to the traditional banana bread like the one my mother used to make, it is hard to believe that you can actually have amazing, delicious banana bread…bread that is that is both vegan and gluten free. How can you do that?
As I have discussed previously, a vegan and gluten free diet does not have to deprive you of yummy food that you loved before you changed your diet. I have often found with gluten free baking, that the bread doesn’t rise as much as traditional bread. As a result, the bread doesn’t seem as light and fluffy. If you don’t add eggs, that problem is even worse.
No worries though–there are solutions for those problems. Baking soda, baking powder, salt and applesauce–yes, those are the tricks. This bread is light, fluffy and so moist. The weather is bad everywhere today, but you can warm up the house with the oven and indulge yourself –this is treat that you deserve. Vegan, gluten free, dairy free.
Grilled Jackfruit Tacos. I know, you may be in an area of the country that is not ready for grilling, or for tacos. You are still fighting the dark, cold winter. Vegan Dip and Veggie Platter. There are so many occasions that I just want a snack, not a whole meal. I want that snack to be delicious, nutritious, and even healthy. This platter features four vegan dips, Toasted Pumpkin Seed Dip, Jalapeno Guacamole, Black Bean Dip and Basil Hummus. I added fresh veggies and fruits and the best gluten free crackers that I have found to round out the platter. If served as a meal, it contains all of the protein, fiber, vitamins and minerals that you need and it takes only 30 minutes to prepare all of the dips and cut the veggies.
