Black Bean Rotini Pasta

Are you always looking for a filling and flavorful dish that not a major carbohydrate overload?  I think that this is it.   Black Bean Rotini Pasta is a pasta that has extra protein from the black beans,  not all the carbs that you will find in standard flour based pasta and contains 14 grams of protein and 15 grams of fiber in each serving!   That is so healthy, it almost seems like it couldn’t possibly be pasta.  I added vegetables, artichokes, peppers, kale and leeks and a basic red sauce to give it some yummy and topped with Trader Joe’s vegan mozzarella cheese.  Seriously, ready in less than 30 minutes, it was better than I could have imagined.

Broccoli Mushroom Tetrazzini

Fall is coming, and we need quick and easy dinners that are also healthy and delicious.  Broccoli Mushroom Tetrazzini is that, ready in 40 minutes, delightfully satisfying, tasty and healthy.  For the pasta, I used Trader Joe’s Red Organic Lentil Sedanini (not sponsored), although you can use any gluten free pasta that you have on hand.  The lentil pasta is a refreshing change from the standard flour pastas that I typically use– it actually tasted like lentils, and was yummy.  This dish is vegan, gluten free and dairy free, of course.

Zucchini Artichoke Mushroom Lasagna

I have to admit, this was the first time that I actually combined all of these specific ingredients to make a vegan lasagna dish, and without exaggerating, this Zucchini Artichoke Mushroom Lasagna is incredible.  Using fresh zucchini, mushrooms, green onions and basil from the garden, I layered the vegetables and topped each layer with marinara sauce, avocado basil pesto, and garlic cashew cheese for a yum flavor experience.   This dish is also vegan, gluten free and dairy free.
