It is Taco Tuesday, and the perfect day for Vegetable Tacos With Chipotle Hummus.  Well actually, any day is the perfect day for tacos, if you ask me.  Tacos are really the perfect food– a few carbs with a corn tortilla, vitamins and nutrition with sauteed vegetables and protein and flavor galore with chipotle hummus.  There are literally an unlimited number of taco combinations that one can prepare to get their taco fix.  Today though, it is vegetable tacos and spicy chipotle hummus.  For those who don’t want the whole taco, or for kids, a fantastic option is to add the same ingredients on baked polenta rounds.  All vegan, gluten free, dairy free and delicious!

Grilled Veggie and Herb Pizza With Garlic Cashew Cheese

Sometimes, it just has to be pizza, and today, it has to be Grilled Veggie and Herb Pizza With Garlic Cashew Cheese.  One of the simple pleasures in life, in my opinion, is growing your own vegetables and herbs.  There is nothing more fulfilling on a bright, sunny day than going outside and picking the food that you will serve.  It is fresh,  it is organic and it is free of chemicals, pesticides and other toxins.  I think that this makes the meal so much more enjoyable!  Today, I had a bounty of herbs ready to be picked, and nothing else can showcase these herbs as well as this pizza.  See if you agree.

Zucchini Rice With Roasted Red Pepper Pesto

Zucchini is abundant this summer, so we need more dishes that feature this awesome vegetable.  Although zucchini can sometimes be bland, this Zucchini Rice With Roasted Red Pepper Pesto is light, flavorful and filling.  This dish is very easy to prepare and requires few ingredients.  Starting with the zucchini and rice, we add sun dried tomatoes, onions and spices.  The Red Pepper Pesto adds a yummy kick, and the crunchy toasted pistachios are the perfect topping.  Try it!

If you are ready for a dish with flavor, fiber, and vitamins,  this 7 Layer Casserole With Jalapeno Creme is all that, and more!  It is quick, easy, and ready to serve to your hungry crowd in less than 30 minutes because the rice and beans are pre-cooked, and it only takes a few minutes to saute the mushrooms and spinach.  I have had this dish several times…on one occasion, I served it cold, like a salad.  The next time I served it,  I heated it, and  and served it like a buddha bowl.  For another fun option, you could make delicious veggie tacos for Taco Tuesday.  Honestly, the secret is the sauce.   Enjoy!

Angel Hair Zucchini Salad

This is the easiest salad to make.  I have new Veggie Bullet Spiralizer that makes several sizes of noodles, or zoodles if you are using zucchini.  Today, I wanted small zoodles, so I whipped up this Angel Hair Zucchini Salad With Figs, Toasted Pistachios and Garlic Cream.  It is quick, easy and delicious.
