Oatmeal Persimmon Bars.  Persimmon is a delicious, juicy fruit that is only available October-February and if you haven’t tried this fabulous fruit, you must.  I use it in many fall recipes, and am always looking for more ways to incorporate this yummy and nutritious fruit into the menu.  Today, we are combining a traditional oat bar with persimmon to give it a touch of sweetness and juicy flavor.  Vegan, gluten free and dairy free.

Pumpkin Cranberry Bread

Both of these ingredients are holiday ingredients…pumpkin for Thanksgiving and cranberries for Christmas.  This bread is perfect for both!  Depending on your preference, you can serve the bread plain, or dress it up with whipped pumpkin vegan cream cheese, or whipped maple butter.  This delicious bread works for breakfast, snack, or holiday dinner.  Vegan, gluten free and dairy free.

Chocolate Tea Cake

Chocolate Tea Cake With Whipped Persimmon.  I made this chocolate cake purposefully small, so it could be a treat, without being high in calories and sugar.  It turned out perfectly–chocolate with a light sweetness, low in carbs and hidden nutrition with yellow squash.  The Urban Dictionary defines Tea Cake as:   ” pastry, bread, or cake traditionally served with afternoon tea, that can be eaten with the fingers.”  By all means, let them eat cake…with their fingers.   Vegan, gluten free and dairy free.

Pumpkin Chocolate Brownies

Pumpkin Chocolate Brownies. Fall=Pumpkins.  Whether it is celebrating Halloween with fantastic decorations, or cooking and baking, pumpkins rule at this time of year.  Pies, cookies, soups, pasta, dips…the list of food that you can make with pumpkin is very long.   When making a dessert however,  it is sometimes a challenge to make it vegan, gluten free, dairy free and still delicious.  These Brownies are all that, and have a little added nutrition with zucchini.  Don’t have pumpkin on hand?  For an additional yummy dessert option, you can make the zucchini brownies and drizzle with chocolate glaze.
