Hot Chocolate Souffle

Ingredients

  • 1 egg
  • 2 tbsp gluten free flour
  • 4 tbsp chocolate or cacao nibs
  • 1/2 cup almond milk
  • Pinch sea salt
  • Pinch red cayenne pepper

Instructions

  1. Grease dish with coconut oil.
  2. Mix all ingredients except chocolate in blender until smooth.
  3. Gradually fold in chocolate.
  4. Bake 20 minutes at 375 °.
  5. Top with chocolate nibs while still hot.

Yes, it is that time of year, and Santa needs some caffeine.  These cappuccino muffins with mocha glaze will definitely add some energy to the tireless job that is Santa’s.

Cappuccino Muffins With Mocha Glaze

Ingredients

    Cappuccino Muffins
  • 2 cups of gluten free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup coconut oil
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 egg (or for vegan, flax egg)
  • 1/2 cup chocolate chips
  • Mocha Glaze
  • 1 1/4 cup raw cashews
  • 1/4 cup maple syrup
  • pinch of salt
  • 1 cup brewed coffee
  • ChocCoffee
  • 2 cups brewed coffee
  • 3 tsp chocolate or cacao powder
  • 1 tsp cinnamon
  • 4 tbsp. maple syrup

Instructions

    Cappuccino Muffins
  1. Preheat oven to 350 degrees.
  2. Blend all ingredients, (except chocolate chips) in food processor until smooth.
  3. Manually stir in chocolate chips.
  4. Pour mix into cupcake pan, lined with cupcake liners. Makes approx. 12 muffins. Do not overfill.
  5. Bake 30-40 minutes until done (test with toothpick)
  6. Mocha Glaze
  7. Add all ingredients to high speed blender. Blend until mixture is smooth like glaze.
  8. ChocCoffee
  9. Blend all ingredients in high speed blender until smooth.
  10. Top with swirl of coconut milk, cinnamon stick and orange zest.

Ingredients

  • 1 cup cooked oatmeal
  • 2 tbsp maple syrup
  • 1 tbsp cacao or cocoa powder
  • 1 cup coconut yogurt
  • 1/2 cup Rasberries and blackberries
  • 1 dragon fruit
  • 2 tbsp hemp seeds
  • 2 tbsp coconut chips
  • 1 tbsp chia seeds

Instructions

  1. Mix the cooked oatmeal with the maple syrup and cacao or cocoa powder
  2. Top with yogurt
  3. Sprinkle berries
  4. Slice dragon fruit and cut fun shapes with cookie cutters
  5. Sprinkle hemp seeds, coconut chips and chia seeds

Two words…cookie and pie….this is a great combo when created with almonds, coconut, cacao,  maple syrup and yum.  Vegan, raw, gluten free, dairy free, but not delicious free. Take a bite!

Cookie Pie

Prep Time: 30 minutes

Yield: 12 slices

Serving Size: 1 slice

Ingredients

    Crust
  • 2 cups roasted raw almonds (if making raw, roast at 115 degrees or leave raw)
  • 1 cup shredded coconut
  • 6 large dates, soaked in water
  • 3 tbsp coconut oil
  • 1/4 cup coconut milk
  • Filling
  • 1 cup shredded coconut
  • 1/3 cup almond butter
  • 3 tbsp maple syrup
  • 3 tbsp coconut oil
  • pinch sea salt
  • 3 tbsp cacao powder
  • 1/8 cup water, or as needed
  • Cacao Drizzle
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp cacao powder
  • Topping
  • 3/4 cup Pomegranate seeds, or berries of your choice

Instructions

    Crust
  1. Mix all ingredients in food processor until smooth
  2. Pour into 9 inch pan and freeze for at least 2 hours
  3. *Note: If you are going to cut into cookies, use a square pan and line with parchment paper so that
  4. Filling
  5. Mix all ingredients in food processor and pour onto frozen crust; return to freezer
  6. Cacao Drizzle
  7. Mix all ingredients and pour on top; spread quickly with knife as sauce will freeze. Serve slightly frozen or if you prefer, you can thaw and store in refrigerator for a softer texture.
  8. Topping
  9. Top with pomegranate seeds or fruit of your choice
  10. To Make Cookies
  11. Remove crust and filling from freezer. Before spreading cacao, allow to thaw enough that you can cut with cookie cutters. Spread cacao drizzle and sprinkle pomegranate seeds. I got these deep cookie cutters at Target.
