Blueberry Pecan Crumble

Even though it is summer, sometimes we need a little baked goodness to brighten our day.  This Blueberry Pecan Crumble is vegan, gluten free, diary free, and has no added sugar.  With a full cup of fruit, it definitely can count as a healthy dessert or, you can feel good about enjoying this dish for breakfast or snack.  In addition to blueberries, we also made a pan with fresh apricots, but you can substitute any fruit that you have to make this yummy dish.

Vegan Peach Cobbler

Whoa, can you believe it, Vegan Peach Cobbler that is also gluten free, and dairy free?  When you are gluten free, delicious desserts like peach cobbler and pie are generally off limits.  I have never gone to a restaurant that offered gluten free cobbler or pie,  because of course, the gluten is what makes it gooey and yummy. Additionally, traditional cobblers and pies have a lot of sugar too, and that is not a good option.  It is just another food that I have given up in the quest for good health through healthy eating.  I am always pleasantly surprised when I find something so simple and delicious that can fill the void for a treat that was previously off limits.  This recipe was inspired by  @glutenfreepalate and her recipe for Berry Pie in a Jar.

Chai Chia Berry Pudding Bowl

I love chia for all of the benefits that it offers…fiber, antioxidants and protein to name a few.  I am always looking to create  great new combinations with chia seeds..  Today, it is Chai Chia Berry Pudding.  We already love chai when mixed with tea, so, why not include it in other recipes?  The result is that the pudding is completely smooth, and goes down like silk. Yum.  On a practical note, on occasion, I am not in the mood for the texture of chia seeds, so I ground them in the Vitamix with a dry grains container.  They are then powdery, and smooth and very pudding like.  Kids will never suspect that this is so healthy and good for them!
