Breakfast Scramble can be whatever you have in the kitchen that you can toss in with eggs to make it a delicious combo for breakfast.  I had sweet potatoes, white potatoes, zucchini,  green onions, yellow pepper and of course eggs.  It is topped with vegan cream cheese to make this a vegetarian, gluten free, dairy free breakfast that you will love.  All in one pan, and ready in an hour.  Perfect for breakfast, lunch, and who doesn’t love breakfast for dinner?

Spinach Garlic Stuffed Shells.  This dish is quick, and easy and will make a beautiful presentation on your table.  No one will be able to wait to bite in to the yummy spinach garlic sauce as it spills out of the shells.  Tofu and cashews give the sauce a smooth, creamy texture that is just like ricotta cheese.  Add a salad and some fresh bread, and dinner is done.The preparation will take you less than an hour, and of course, the cream sauce and the shells are vegan, gluten free and dairy free.

Instant Pot Lentil Pasta With Kale and Cauliflower Alfredo

Instant Pot Lentil Pasta With Kale Cauliflower Alfredo is seriously delicious and on your table in less than thirty minutes.   The pasta cooks in the Instant Pot in 3 minutes, and the cauliflower alfredo also takes 3 minutes.  Yes, it is that quick, that easy, that nutritious and, incredibly tasty.

Why lentil pasta?  In addition to being gluten free, the green lentil penne pasta that I used in this recipe has 7  grams of fiber and 14 grams of protein for an approximately 1 cup serving! When you compare to traditional flour pasta that has 2 grams of fiber and 8 grams of protein, it is an easy decision for me.  This dish is perfect for a quick dinner, and, despite all the hidden nutrition, the kids will love it.  Vegan, gluten free and dairy free.
