Veggie Balls With Hot Peanut Dressing

Veggie Balls With Hot Peanut Dressing are are quick, easy and delicious.  You only need four vegetables–cauliflower, mushrooms, sweet potato and red pepper and you can the balls ready for baking in less than 10 minutes.  When I am making vegan dishes, I like to spice them up with a variety of sauces or dressings so that eating vegan isn’t a taste challenge or sacrifice.  Although these veggie balls are tasty on their own, they are off the flavor chart when you add the Hot Peanut Dressing.  Add a tossed green salad, and you have a complete, delicious and nutritious lunch or dinner.

Vegan Veggie Balls

Ingredients

    Veggie Balls
  • 1 cup chopped red pepper
  • 1 sweet potato, shredded
  • 2 cups of minced cauliflower
  • 2 cups chopped mushrooms
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp sea salt
  • 1 tbsp red pepper flakes
  • 2 tbsp flax seed, ground
  • 2 tsp chia seeds
  • 3 tbsp almond flour
  • 1/4 cup aquafaba
  • Hot Peanut Dressing
  • 1/2 cup peanut butter
  • 1/4 cup coconut aminos
  • 1/4 cup maple syrup
  • juice of 1 lime
  • 4 cloves garlic
  • 1 tsp sea salt
  • 1 tbsp red curry paste

Instructions

    Veggie Balls
  1. Saute garlic in olive oil; add all vegetables and stirfry for 5 minutes. Add salt and red pepper.
  2. Let cool.
  3. Add remaining ingredients and mix.
  4. Form veggie balls with small scoop.
  5. Bake at 375 degrees for 30 minutes.
  6. Hot Peanut Dressing
  7. Blend all ingredients in high speed blender until smooth.
  8. Serve. Makes approximately 24 small balls.
