Baked Sweet Potatoes With Ginger Tumeric Creme

Ingredients

    Potatoes
  • 2 large sweet potatoes, peeled
  • 1 tsp sea salt
  • 3 tbsp coconut oil
  • Ginger Tumeric Creme
  • 1 cup raw cashews, soaked
  • 1 cup water
  • 3 tbsp maple syrup
  • 1 tsp tumeric
  • 1/2 tsp sea salt
  • 1 tbsp fresh chopped ginger
  • juice of 1 small lemon

Instructions

    Potatoes
  1. Spiralize the sweet potatoes
  2. Place sweet potatoes on baking sheet lined with parchment paper
  3. Drizzle coconut oil and sea salt
  4. Bake for 40 minutes at 350 degrees
  5. Ginger Tumeric Creme
  6. Blend all ingredients in high speed blender.
  7. Mix the ginger creme into the baked sweet potatoes.
  8. This recipe makes approximately one cup of ginger tumeric creme, so you may have extra if you like your sauce light.
