Homemade Curly Fries With Chipotle Aioli

Yes, it is summer, and maybe it is too hot to turn the oven on, but, we must have these Homemade Curly Fries today!  Start with a bag of red, white and blue potatoes (approximately 15 small or 8 large), spiralize them into curly shapes, pop them in the microwave and then broil for crispiness.    In less than 30 minutes, you will be dipping these crunchy potatoes in tangy chipotle aioli and, trust me, it is worth all the heat. Vegan, gluten free and dairy free.

Fruit and Nut Energy Bars

Energy is a good thing, and everybody wants some. The only bad news is, after you try these tasty Fruit and Nut Energy Bars, you won’t be able to ever give them up.   It is true that food is energy, but it is great to find a snack or meal that, in addition to being healthy, is also so delicious.  I have to admit, when testing some of the vegan and gluten free recipes, they sometimes lack that zing that I really want in order to not feel deprived on a limited or healthy diet.  These bars do not disappoint!

Vegetable Pizza Bread With Herbs

In the prime of summer, all of my home grown herbs and tomatoes are ripe for picking.  There is only one food that allows me to use all of these goodies–Vegetable Pizza Bread With Herbs.  This dish is a simple gluten free bread with greens and onions, and topped with roasted red pepper and garlic.  I suggest that you serve with an array of herbs to choose from, so that  you can add the flavors that you love the most.  For me, basil is the best herb with pizza or pizza bread, but there are many others.   Healthy and tasty, this vegetable pizza bread is vegan, gluten free and dairy free.
