Blueberry Pecan Crumble

Even though it is summer, sometimes we need a little baked goodness to brighten our day.  This Blueberry Pecan Crumble is vegan, gluten free, diary free, and has no added sugar.  With a full cup of fruit, it definitely can count as a healthy dessert or, you can feel good about enjoying this dish for breakfast or snack.  In addition to blueberries, we also made a pan with fresh apricots, but you can substitute any fruit that you have to make this yummy dish.

Vegan Peach Cobbler

Whoa, can you believe it, Vegan Peach Cobbler that is also gluten free, and dairy free?  When you are gluten free, delicious desserts like peach cobbler and pie are generally off limits.  I have never gone to a restaurant that offered gluten free cobbler or pie,  because of course, the gluten is what makes it gooey and yummy. Additionally, traditional cobblers and pies have a lot of sugar too, and that is not a good option.  It is just another food that I have given up in the quest for good health through healthy eating.  I am always pleasantly surprised when I find something so simple and delicious that can fill the void for a treat that was previously off limits.  This recipe was inspired by  @glutenfreepalate and her recipe for Berry Pie in a Jar.

Grilled Veggie and Herb Pizza With Garlic Cashew Cheese

Sometimes, it just has to be pizza, and today, it has to be Grilled Veggie and Herb Pizza With Garlic Cashew Cheese.  One of the simple pleasures in life, in my opinion, is growing your own vegetables and herbs.  There is nothing more fulfilling on a bright, sunny day than going outside and picking the food that you will serve.  It is fresh,  it is organic and it is free of chemicals, pesticides and other toxins.  I think that this makes the meal so much more enjoyable!  Today, I had a bounty of herbs ready to be picked, and nothing else can showcase these herbs as well as this pizza.  See if you agree.

Zucchini Rice With Roasted Red Pepper Pesto

Zucchini is abundant this summer, so we need more dishes that feature this awesome vegetable.  Although zucchini can sometimes be bland, this Zucchini Rice With Roasted Red Pepper Pesto is light, flavorful and filling.  This dish is very easy to prepare and requires few ingredients.  Starting with the zucchini and rice, we add sun dried tomatoes, onions and spices.  The Red Pepper Pesto adds a yummy kick, and the crunchy toasted pistachios are the perfect topping.  Try it!
