Cappuccino Muffins With Mocha Glaze

Ingredients

    Cappuccino Muffins
  • 2 cups of gluten free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup coconut oil
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 egg (or for vegan, flax egg)
  • 1/2 cup chocolate chips
  • Mocha Glaze
  • 1 1/4 cup raw cashews
  • 1/4 cup maple syrup
  • pinch of salt
  • 1 cup brewed coffee
  • ChocCoffee
  • 2 cups brewed coffee
  • 3 tsp chocolate or cacao powder
  • 1 tsp cinnamon
  • 4 tbsp. maple syrup

Instructions

    Cappuccino Muffins
  1. Preheat oven to 350 degrees.
  2. Blend all ingredients, (except chocolate chips) in food processor until smooth.
  3. Manually stir in chocolate chips.
  4. Pour mix into cupcake pan, lined with cupcake liners. Makes approx. 12 muffins. Do not overfill.
  5. Bake 30-40 minutes until done (test with toothpick)
  6. Mocha Glaze
  7. Add all ingredients to high speed blender. Blend until mixture is smooth like glaze.
  8. ChocCoffee
  9. Blend all ingredients in high speed blender until smooth.
  10. Top with swirl of coconut milk, cinnamon stick and orange zest.

Grilled Vegetable Pizza With Mixed Greens

Ingredients

    Homemade Pizza Sauce
  • 6 oz tomato paste
  • 3 tbsp. water
  • 2 tbsp. Italian seasoning
  • 2 tbsp. olive oil
  • 1/2 tsp sea salt
  • Pizza
  • 1 cup mushrooms
  • 1 orange pepper, chopped
  • 8 cloves of garlic
  • 2 tbsp. olive oil
  • 1/2 tsp sea salt
  • 4 gluten free pizza crusts
  • 1 cup of vegan mozzarella cheese
  • Salad
  • 2 cups of mixed greens, kale & spinach
  • 1/2 cup cherry tomatoes
  • 1/4 cup chopped green onions

Instructions

    Pizza Sauce
  1. Place all ingredients in a jar and shake until blended.
  2. Pizza
  3. Heat oven to broil
  4. Place vegetables on baking sheet-add salt and olive oil. Broil until vegetables are browned
  5. Reduce temperature of oven to 375 degrees
  6. Spread pizza sauce on each pizza crust
  7. Evenly distribute grilled vegetables on each pizza crust.
  8. Top with vegan cheese
  9. Bake in oven approximately 20 minutes or according to pizza crust directions
  10. Top with mixed greens
