Zoodles and Things With Basil Cream

Zoodles, the healthy alternative to pasta!  I just got a new spiralizer, so, I decided that I must have some zoodles.  Zucchini is a somewhat bland vegetable, but when it is topped with Basil Cream Sauce, it is excellent.  We combined the zoodles with tomatoes, pickled cabbage, rice noodles, carrots and topped with Basil Cream and toasted pine nuts.  Great for lunch or dinner.

Zoodles and Things With Basil Cream


  • 2 zucchini
  • 1/2 cup carrots
  • 1/2 cup pickled purple cabbage
  • 1/4 cup toasted pine nuts
  • 1/2 cup rice noodles cooked
  • 1/2 cup cherry tomatoes
  • Basil Cream Sauce
  • 1 cup raw cashews, soaked
  • 4 cloves garlic
  • 1 cup of water
  • 1 tsp salt
  • juice of 1 lemon
  • 2 tbsp lemon zest
  • 2 cups basil


  1. Sprialize zucchini and place in circular pattern on round plate
  2. Shred carrots and mix with rice noodles and cabbage
  3. Place in center of zucchini
  4. Slice cherry tomatoes and place around center
  5. Top with toasted pine nuts
  6. Basil Cream
  7. Mix all ingredients in blender until smooth
