I think that the best food can be found inside of a taco. There are so many varieties of tacos, and they can be tossed together quickly with whatever ingredients you have on hand. Since going gluten free, corn tortillas have been essential to my feeling that I can still love food without being deprived. Staying with my main theme of trying to fit as much nutrition into a square inch as possible, I have combined cauliflower, sweet potatoes and brussel sprouts for a delicious and filling taco base. We have spiced it with with garlic, smoked paprika, chipotle and the best fats–avocado and cashews. I had no idea how they were going to turn out, but seriously, these tacos bring the flavor. More….
Summer is coming, and we want something cool and fresh to eat. A quick trip to the Farmer’s Market, and you are all set to whip up these spring rolls in less than 30 minutes. We used red pepper, cucumber, avocado, mango, carrots, green onions and purple cabbage, but these spring rolls are so versatile–whatever fruits and vegetables you have available can be added to change up the flavor. What is it about pizza that makes it the perfect meal for breakfast, lunch, dinner or anytime in between? This cauliflower crust veggie pizza eliminates the negative dough, carbs and fat baggage that come with a traditional pizza, but still allows all the enjoyment that the taste of pizza sauce, basil, vegetables and cheese bring. Try it with any combination of pizza ingredients that you may have on hand….this pizza brings it.
Chocolate Chia Raspberry Pudding
- 1 cup of almond milk
- 2 tblsp of maple syrup
- 1/4 cup of chia seeds
- pinch of sea salt
- 2 tbsp cocoa powder
- 1/2 cup of raspberries or whatever berry you prefer
- Mix all ingredients in glass jar with a top. Shake for a minute and let it set for at least an hour.
- Voila! Delicious and nutritious.
My new favorite superfood is chia, and I add chia seeds to many recipes to increase the nutritional value of the dish. This chia pudding is perfect for dessert, or as the base for breakfast bowls. I mix the flavors up with different spices or different fruits for a low glycemic dish packed with fiber, protein, anti-oxidants and vitamins. For summer, you can freeze the pudding to create these refreshing pudding pops.
