Zoodles and Things With Basil Cream

Zoodles, the healthy alternative to pasta!  I just got a new spiralizer, so, I decided that I must have some zoodles.  Zucchini is a somewhat bland vegetable, but when it is topped with Basil Cream Sauce, it is excellent.  We combined the zoodles with tomatoes, pickled cabbage, rice noodles, carrots and topped with Basil Cream and toasted pine nuts.  Great for lunch or dinner.

Zoodles and Things With Basil Cream

Ingredients

    Salad
  • 2 zucchini
  • 1/2 cup carrots
  • 1/2 cup pickled purple cabbage
  • 1/4 cup toasted pine nuts
  • 1/2 cup rice noodles cooked
  • 1/2 cup cherry tomatoes
  • Basil Cream Sauce
  • 1 cup raw cashews, soaked
  • 4 cloves garlic
  • 1 cup of water
  • 1 tsp salt
  • juice of 1 lemon
  • 2 tbsp lemon zest
  • 2 cups basil

Instructions

    Salad
  1. Sprialize zucchini and place in circular pattern on round plate
  2. Shred carrots and mix with rice noodles and cabbage
  3. Place in center of zucchini
  4. Slice cherry tomatoes and place around center
  5. Top with toasted pine nuts
  6. Basil Cream
  7. Mix all ingredients in blender until smooth

Mango Kiwi Chocolate Chia Dessert

Looking for a dessert that you can make with whatever you have around the kitchen?  This is it!  If you have chia seeds and nut milk, you can whip up the chocolate chia pudding.  Layer with whatever fruit you have, some coconut yogurt and top with the superfoods that you love.  Healthy and sweet:)

Mango Chocolate Chia Dessert

Ingredients

  • 1/2 cup chocolate chia pudding
  • (1 cup almond milk, 1/4 cup chia seeds, 1 tsp vanilla powder, pinch salt, 2 tbsp cacao makes 1 cup)
  • 1/2 cup pureed mango
  • 2 kiwi
  • 1/2 cup coconut yogurt
  • figs and goji berries for topping
  • chocolate cacao sauce
  • (1/2 cup water, 4 tbsp agave, 1/4 cup cacao powder, 2 tsp coconut oil heated to boiling)

Instructions

  1. Layer:
  2. kiwi slices
  3. chocolate chia pudding
  4. mango
  5. coconut yogurt
  6. top with figs and goji berries
  7. drizzle with chocolate cacao sauce

Jackfruit Taco With Portobello Mushroom Bun

I had never even heard of jackfruit until a few weeks ago–it has a weird name, and seemed like a food that could only be used as a fruit.  I was so pleasantly surprised to find out that jackfruit can be used in a main dish, and is actually delicious.  Fun Fact:  it is a species of the mulberry and fig trees and is rich in protein, potassium, calcium, and iron   How yum is that?  We made jackfruit tacos with both  corn tortillas and portobello mushroom buns.  Amazingly, they were delicious and we felt like we had had a gourmet meal.  More…

Blueberry Banana Nice Cream

Ingredients

  • 2 frozen bananas, chopped
  • 1 cup blueberries
  • 1/8 cup almond milk, as needed
  • For garnish
  • 2 tbsp pomegranate seeds
  • 2 tbsp cacao coconut chips

Instructions

  1. Blend bananas in food processor with meat blade, gradually adding milk until consistency of ice cream. Add blueberries and blend briefly.
  2. Garnish with pomegranate, cacao coconut chips and voila, easy dessert.
